Pimento Cheese-a southern staple. Keep unhand and you always have lunch or a quick appetizer ready
- ⅓ cup mayonaise
- 16 ounces freshly grated sharp cheddar cheese
- 4 ounces room temperature cream cheese
- 1 small jar pimento, drained
- 1 tablespoon grated onion
- ¼ teaspoon cayenne
- ½ teaspoon salt
- 1 teaspoon black pepper
- 5-6 dashes of tabasco (more if you like it spicy)
- ¼ cup diced pickled jalapeƱo (Optional-add if you want it spicy. Add to your taste-I like it spicy)
- Combine all ingredients in a bowl, and stir together. Serve immediately with crackers, or cover, refrigerate, and let flavors marinate. If you want a creamier pimento cheese feel free to mix in a food processor.
